Question On My Espresso Stout?

    Fellows I went back and looked at my post & I wanted to make certain I hadn't post this question.Below is my Recipe for My Favorite Beer I make.Question is Which water would you say? Hard Water or 1/2 Spring and 1/2 Hard water?? I have been making it with Hard water but I wanna fine tune this,I wanna use the water I am suppose to by standards,I know there are 10 thousand of those but whats the first thing you would say on this!!

    "Espresso Stout Recipe"
    1-lb & 8ozs Kilned Coffee Malt(3.0 SRM) Grain

    1-lb Chocolate Malt (Thomas Fawcett) Grain

    8.0 ozs Chateau Biscuit(25.4 SRM) Grain

    1-lb Dark DME Traditional(Dark)(8.0 SRM) Dry Extract

    6-lbs & 14.4 ozs of Pale Liquid Extract

    10.7 ozs Milk Sugar Lactose
    2.0 ozs East Kent Goldings (Hop) After Your Boil Starts(Boil 60 minutes)

    1 oz Fuggle (HOPS) Add last 15 Minutes Of Boil

    1 pkg of New World Strong Ale Yeast or A Nottingham Yeast packet)

    I like EKG better as a flavor hop than Fuggle.

    I'd change your hop additions a bit. Assuming the AAs are about the same on your hops, you can use the EKG as a flavoring addition around the 10 min mark. Use the oz of Fuggle as a bittering hop along with the other oz of EKG. Use an IBU calculator to make sure you're where you want to be..

    Have you bought some extra high AA neutral hops (Magnum, Summit etc.) for your freezer so that you can add IBUs to your recipe if you need to?

    Looks good to me. Magnum is a good bittering hop, but it will change the taste. Personally I love most hops , but in a stout goldings, fuggles are my usual combo.

    I also would use the Nottingham yeast.

    I think as far as your water is concerned, did you ever get it tested? I got mine tested and I ended up very "neutral" as far as it goes, and I am trying not to mess with it as much as possible (regardless of what people think).

    But I asked for some stout help recently too. Someone mentioned adding some chalk and gypsum. If you have Brewcipher you can adjust the water profile in that.

    Yeah, without a water report we can't help you too much. I will say that the hardness will not affect your beer much, (in your case). Hardness is a product of the calcium and magnesium levels. Both don't really affect the flavor of beer (I think). One thing you could do is add some CaCl2 to kettle. That will help promote maltiness, which is what you want for Stout. How much? not sure without a water report.
    If I were brewing extract, I'd start with RO or distilled water. Then adjust my water profile from there.
