Question regarding hop schedule with Mosaic

    I've been wanting to make something with Mosaic for months now and came across a pretty simple Mosaic IPA recipe in Brew Your Own magazine. Here is the hop schedule:

    1 oz @ 75 mins
    .75 oz @ 30 mins
    1 oz @ 0 mins

    2 oz Dry Hop

    Now I know it calls for .75 oz @ 30 but I bought 5 ounces so I'll just use 1 there.

    My question is...5 ounces doesn't really seem like a lot. I heard Mosaic is a pretty potent hop so maybe I'm wrong here but is it worth it for me to drive two hours round trip to get another 2 or 3 ounces of hops or should I just stick with this? Would you keep this schedule?

    I think you should be fine. Mosaic is a great hop but I personally think its way to sweet and fruit on its own.

    Maybe I'm doing it wrong but I've got a blonde with 2 ounces of it as a single hop that I'm kegging that I can report back on.

    But you should be fine. It is potent and flavorful and tosses a great aroma.

    If it were my beer, I would use a more common bittering hop @ 60 (magnum, columbus, etc... whatever you have that will work) instead and increase the dry hop to 3oz.

    If Mosaic is as potent as people post I would not even consider using more than 2 ounces for dry hopping. I used 1.5 ounces of Citra for dry hopping an all Citra hopped IPA and I had to ‘age’ that beer before it was palatable.

    P.S. In case it needs to be stated: Citra is a very potent hop.

    Mosaic is probably the only hop I would "SHIT" regularly (single hop, intensely tasty) :slight_smile:

    Stupid question I know. But last (and only) time I dry hopped I used whole leaf and dumped them in...this caused some issues when siphoning my beer later down the road. This time I'll be dry hopping with pellets and plan on putting them in a bag with some sterilized marbles. I'll be dry hopping in a bucket so my question is do I just close the lid on the draw string of the bag to keep it in place or will that be enough to effect the seal and let air into my beer?

    How do you guys do it when using a pellet bag? Thanks.

    If you are bagging it, just free float it in there. Siphon wouldn't really be an issue. Or worse case.. Toss them in loose, and use the bag around your siphon when you transfer it.

    It's a good one, but man, I wish I could just love it like everyone else.. Then again I'm with Jack, I've got this Zombie Dust clone on tap, and I'm just not loving, loving it. Great beer, but I'm really getting worn out on Citra. I've got a Citra Pale Ale clone that is fantastically good, but it's a bit more rounded on the Citra.

    I added Mosaic to the black IPA I have on tap in the dry hop, and it's big enough to fight Simcoe, Columbus and Chinook for the front seat..

    Yeah man, the bag will keep most of it out the way, and since you are using a bucket, once it gets low enough, and you tip the bucket to get every precious drop you can get without getting a bunch of trub, just grab the bag and pull it out.

    The hop schedule for this is calling for a 75/30/0/DH Would you move the 30 to a 20 or keep it at 30? Is there much of a difference?

    I recently did a Mosaic SMASH recipe that called for:

    1 oz first wort hopping
    1.5 oz 15 minutes
    1.5 oz 0 minutes
    2 oz dry hop

    I thought it would be overpowering, but it turned out incredibly tasty. Nice, strong bitterness followed by an explosion of fruity/sweet flavors. HUGE aroma as well. It helped that the malt is pretty sweet too (Golden Promise). It's one of my favorite homebrews so far and it's been a big hit with my friends.

    Not really. Other than slightly more IBUs at 30 vs. 20 (and even then) I'd be hard pressed to pick out which beer was brewed with a 30 vs 20 min hop addition.

    What do your normal beers come out like and how are your schedules different from this recipes'? If you're beers tend to come out too bitter and this schedule is similar to your normal schedule, then drop the 30 to 15 or drop the 75 entirely, moving it to 30 and the 30 to 15 or 10. If they are normally spot on with this recipe and are normally just the right range of bitterness, keep it as is.

    I think the 5 oz or so for your recipe will turn out a nice beer and because its not over hopped, the flavors from the Mosaic won't be muddled (Personal experience from over hopping a beer is that flavors get muddled and beer gets slightly vegetal, both not good).

    Just tasted my friend's all Mosaic yday and he used too much, I think, it was 8 oz.s total in a 5 gal. of 10.55 OG beer (2 oz. DH). There was a strange lingering taste that we couldn't describe but which isn't present in other beers he and I both make. I love Mosaic but feel it should be mixed with other hop(s), and added with a bit of care.

    Well my last beer which was similar to this was a Citra/Amarillo pale ale which I bittered with Warrior. With that beer I followed a 60/30/10/0/DH and it came out nice but I'm using 1 oz less this time around with the Mosaic so there is no 10 minute addition.

    I loved the Citra/Amarillo combo though. I might just follow this 75/30/0/DH and see how it turns out.

    Thanks for posting Dave. I've heard that Mosaic can be quite potent which is why I'm only using 5 oz total in my 5 gallon 1.066 batch. Hopefully it won't be too overpowering, regardless I've never used this hop and I prefer the tropical flavor IPA/PA (Jai Alai, Fresh Squeezed, ZD etc..) to the traditional hop bombs so I'd like to isolate the Mosaic first time around to see what kind of characteristics I get from it.

    I had a wonderful Mosaic pale ale at the NHC in 2012. It was brewed using Vinnie's Hop 2 It recipe, which is used to evaluate new hops at RR.

    Mosaic at 10.4 AA, 1.053 OG.
    90 = 7.5gr
    30 = 26 gr
    0 = 37.5 gr
    Dry = 21 gr

    Dave, I would be willing to bet that given some more aging this beer will become a more pleasant drinking beer.
