Question regarding yeast with high gravity beer

    It seemed to slow down yesterday afternoon. Oh and i'm not counting bubbles!! lol, i have the beer in my chest freezer so i definitely aren't watching bubbles.

    So you have 3 gallons of head space in there? Since fermentation has pushed any instance of O2 out, I would leave that lid on until you're ready to rack. That's a lot of room for O2 exposure.

    The pros can rouse the yeast using CO2 through the cone. It works.
