Questions about Aging at Room Temp

    I recently moved from WI to MD and brought along some CW BBBW and their BB Scotch Ale. As I live in a one bedroom apartment we don't have a whole lot of space. Right now its sitting in my closet in a paper grocery bag with a couple black garbage bags wrapped around. Reg temp in the apartment is about 75 F. Is this getting a little warm if I want to store for 1-3 years? Should I be cellaring them in the Fridge at about 55 F?

    I say do what you want to do - there are preferred "cellar temps" but don't panic over it. I keep beers in boxes, closets, keezers, fridges and they all taste great when it's time to share them. Any beer stored cold or even at a cellar temp 55 +/- should keep better than the 75*+ beers but it's not a deal breaker IMO. Cheers!

    Personally, I more worry about aging your food in a 55 degree fridge :slight_smile:
