I have a couple saisons that I fermented with some brett and other microbes. They both have healthy pellicles forming or already formed, but I'm really liking the way they taste now. Is there any harm in racking/bottling from under the pellicle before it drops? Will pellicles form in the bottles?

No issue racking under pellicle (pellicle may never drop) just make sure FG is stable before bottling.
Pellicle may (probably) form in bottle, keep it cold for a few days before bottling and pellicle will drop.
Russian River sours many time haves pellicles in the bottle. Basically a non issue.

If you like the taste now, bottle it and enjoy! Save a few bottles to try down the road to see I there is any improvement.

    Cheers!

Just what I was hoping to hear! My biggest concern/question was why I don't ever see pellicles in commercial beers, so it's assuring to know it does indeed happen. I'll be sure to tuck away a few bottles in a deep corner of the cellar for down the road. Thanks!
