interesting, you would call this a rye spruce belgian pale ale?

two things: fisrt, that is a lot of crystal malt, light crystal malt, but still a lot. a would go with 1 1/2 # at most betewen the carahell and crystal 20. (this is still a pretty good amount, but if that is what you want) even though i guess the sruce needels may need some sweetness to balance. i would mash lower too with that amount of crystal,, mybe 148 to get it more dry. add some sugar even.

second, that is a good amount of rye. have you ever used that much? the mash can get pretty stuck with that much rye. i would do a thin mash (1.5-2 L per pound) and consider a betaglucan rest at 100 F for 15 to 30 min.

cool man, thanks! I'll probably try keeping the mash temp under 150....Now that I think about it, that is plenty of crystal!!

Uh....I guess I haven't used quite this much rye.....but with rice hulls i'll drain slow and run that risk.

Yeah, I have no idea what you'd call it haha.....I like trying crazy things! I find I enjoy lots of different flavors going on etc.....We'll see how it comes out soon! Ingredients just showed up today from midwest!

    Cheers

When you say 'spruce needles' do you mean new growth tips? or mature needles? If you pick both and chew on them, you'll find the new growth tips to be much more pleasant.

    I just saw this thread

Sounds like the old growth needles are favorable to some. But it sounds like, either way you go, taste the needles first.

Brewing this week finally! Wish me luck!

As suggested I may lower the mash temp just a bit..shoot for 15o!

cheers! On a side note my blazing 2 acre ale....kegs about gone! tingles the throat for a good while....overhopped it though as the bitterness comes through too much...overall its dang good!
