No idea, but I would guess it's through the POS tracking the pours.

I spent way more time on DigitalPour's website than anyone not owning a bar should. They make the claim "no specialized hardware" and the testimonial from Saraveza mentions the integration with her POS system allowing her to record how many ounces poured and paid for as well as the remaining percentage of kegs taken offline. As a beer data nerd, the analytic report screenshots look promising for someone so inclined to play around with their POS data and fine tune a taplist.

So, would that include tasters? How does it account for beer lost due to foaming? I'd be curious to see how close, and how often, they get to the theoretical 124 pints in a 1/2bbl.

I'm guessing samples/flights have to be rung up accurately in order to keep everything accounted for, and then some allowance made for foaming and other loss, but they don't get too specific on their site. Silver Moon is the only place in town that I know of using DigitalPour, but they don't use the "amount remaining" feature. Might be worth asking them to see what the back end is like, though.

I'm pretty sure you can account for tasters. I believe I've seen the guys at Bailey touching one of the sensors when they do a taste for someone.
