Raw salmon

    I'm going to serve some raw salmon together with some kind of soy-sauce flavoured with a little bit of garlic, ginger, lemongrass and lime. I will probably also serve some pickled ginger and some nice thinly sliced vegetables.

    So what kind of beer is best suited for this dish? I've been considering a geuze or maybe go for the "safe" option with some kind of wheat beer. Anyone have any better suggestions or just general input?

    A nice crisp Imperial Pilsner would work also! I think the Gueze would be to sour for the gentile taste of the salmon flech and over power the dish and thewheat beer might come off to sweet. Try My Antonia from DFH or Morimoto from Rogue.

    Smoked porter, all the way! Just don't go overboard with all of those other flavorings.

    Had a geueze paired with some miso-laquered salmon filet at a "Beer vs. Wine" pairing dinner recently, and it was deemed a bad match for all 3 of us beer geeks sitting at one table. The rest of the wine people seated there didn't like the geueze at all, but the wine pairing (a red cab franc) was worse. I adore gueuze, but I'd suggest a crisp pils or a beer with ginger in it, or a wit for your dish - which sounds yummy, BTW.

    i really like light but flavorful pilsners, ala SA noble pils or rogue good chit.

    I thought Hellhound on My Ale would be a good pairing for Sushi, but the bottle I had fell off of a cliff long ago, so it wasn't too good.

    Many backups though.... that's the key!

    An IPA would obliterate the delicate flavor of most sushi IMO.

    Personally I prefer a Junmai Ginjo.

    I enjoy Salmon so much, that i would just drink water.

    Salmon is one of the few things i <3 as much as Barleywines.

    Saison. Very versatile beer. Has palate cleansing qualities while being full flavored.

    Sorachi Ace sounds really good, I feel Sofie could work well too, really any Saison would be good.

    Thanks everyone for all your replies, have really given me something to think about. Saison certainly sounds like a good option and also I just love saison. :slight_smile:

    I also just realised that I have a bottle of Schneider Weisse Tap X Mein Nelson Sauvin at home, any thoughts about that one? I was kind of thinking that the white wine like characteristics of Nelson Sauvin shoul work well with fish, however I could be very wrong (and have been before:flushed:)

    I am sure most people would think that way but I tend to try and find very floral citrusy vs malt bomb vs hop bombs. I dont eat sushi all that often anymore but when I do its at home and I generally have an IPA laying around.
