Ready to drink?

    This Tuesday will be 2 weeks my beer has been in the bottle carbonating.

    Will it hurt anything If I pop one open a few days early or do I wait it out?

    I usually pop a test bottle sooner than that. But 2 or more weeks is always necessary for a beer to reach its prime. How long "depends." The worst that can happen if you pop one too early is that you'll have one fewer bottles of beer that's finished conditioning. So patience = good.

    3 weeks is best to start but I never do because im an idiot and can never wait .. every time I wish I had waited .. flavors seem to be more on point at week 3 vs 2

    It is a milk stout. Just your typical recipe I guess? From a kit

    give it a shot. Just don't expect to be wowed yet.
    I use a few little 187mL bottles in each bottle-conditioned batch to waste less but still satisfy my curiousity every 10 days or so.

    i usually have one at 1,2, and 3 weeks. I like to see how its coming along. Eventually Ill probably stop but how are you supposed to identify 'green' falvors if you always wait 3 weeks. I just like to get to know the beer.

    I don't encourage new homebrewers to rush into things, but I also think it's important that you see how your beer develops. It may not be fully carbed yet, and it will probably have something undesirable to it. Maybe something boozy, or a lingering sweetness, or a harsh bitter from the hops. Taste for these, and try to appreciate it for a young beer. I'll suggest you try one every few weeks after that until you find it desirable to drink. I'd say that should happen within the next couple of months.

    As this beer is developing, start brewing again. You have about a month of waiting before you can get your next batch into bottles. No reason to run out of beer!

    a couple of Months :-/? The receipe said give it at least 2 weeks to fully carb!

    Yeast don't read recipes. At least not yet.

    I would be willing to bet that after 2 weeks your beer will be fully carbonated. Having stated that, the quality of the beer in terms of flavor maturation will improve with some additional time in the bottle.

    I have a batch of Galaxy IPA that I bottled on 4/9/14 (19 days in the bottle as of today). I know that these beers are fully carbonated but I will not try one for another few days and I will not conscientiously be drinking this batch for another week or two.

    Bottom line is that beer being carbonated does not necessarily mean that it is really ready to be consumed. But this is your beer so you get to choose when you want to drink it.

    Wow! I must be the most impatient brewer here! I wait like 4 or 5 days to try. Most of the time they are slightly carbed, but as everyone said they dont hit their stride til a couple weeks.

    I opened one last night and it was fully carbed and great! I am going to let them sit for a while more then and age before I get into them again.

    Unless you prefer green tastin'beer...the only thing possibly hurt would be your taste buds.

    Yes, I'm always ready to drink.
    And I'm sure your first bottle is also. When I bottled I waited 4 or 5 days before I opened the first one just to see how it was progressing. I knew it wouldn't be prime, but I always like to chart the beer's progress.

    2 weeks is when I try mine. Usually its ready.
