Recipe Critique: Pillowy Saison

    Looking to make a Saison that is soft, pillowy, fruity, and tropical for summer drinking.

    OG 1.050
    FG 1.009
    Abv 5.4%

    5 lb Bohemian Pils
    5 lb White Wheat
    1.5 lb Carapils
    2 oz Acidulated Malt

    Hop shot for 30 IBU
    1 oz Denali @ 15 min
    1 oz Denali @ WP
    2 oz Denali @ DH after fermentation

    WLP 566 @ 74F, ramp up after 48 hr to 78

    Water will see Cl:So4 at around 200:100 and thinking about doing the mash at around 156F


    Any suggestions?

    I think that sounds pretty interesting. In fact, I might steal that idea, and make something similar sometime. One recommendation- how about adding some Brett? Maybe co-pitch a vial of WLP650? That would pair nice with saison yeast, and add some fruity characteristics.

    Don't know Denali or 566 but can imagine loving a wheat-focused 565 beer.

    Wyest belgian saison gives a big ass fluffy head to the beers I use it in. Sounds like a belgian NEIPA, good luck.

    I have an easy drinking Saison on right now. Pilz, Flaked Oats, Flaked Wheat, Aromatic, Acid, sugar, Belgian Saison, Tett, Hall, Citra.

    I would drop bitterness to IBUs 25.

    I like this suggestion as well. I'd also suggest completely dropping the dextrin malt and adding more pils and wheat, while at the same time using a saison strain that is a big glycerol producer, like French Saison, along with 566 (Blaugies).

    I brewed it Saturday with the lower IBU that you guys recommended. Will try that @EvenMoreJesus for an upcoming Saison! Cheers.
