Recipe Critique: Wild Imperial IPA

    Inspiration from Anchorage's Bitter Monk and Galaxy White IPA.

    OG 1.072
    FG 1.010
    ABV 8.1%
    IBU: 44
    SRM 5.0

    76.8% Bohemian Pilsner Malt
    12.8% Flaked Oat
    6.4% Carapils
    3.2% Honey Malt
    0.8% Acidulated Malt

    158F infusion mash

    1 oz Galena FWH
    2 oz Galaxy in Whirlpool
    4 oz Galaxy Dry Hop #1
    4 oz Galaxy Dry Hop #2

    Water: 50 ppm SO4, 175 ppm Cl, 120 ppm Ca

    WLP 550 Belgian Ale primary x3 weeks


    Dry hop #1 for 4 days then cold crash
    Transfer bright beer to keg with Brett blend and priming sugar
    Let keg condition x2 months
    Degas and add Dry Hop #2 for 4 days
    Remove dry hop
    Cold condition a few days with some head pressure, then bottle.

    Looks like it would make a tasty brew!

    Is the 1st dry hop necessary though? Wouldn't a lot of your hop aroma fade after 2 months of aging with Brett?

    Personally, I've never cold conditioned before bottling, but couldn't you just leave 2nd dry hops in leg while you do this? Or will it not clear enough?

    First dry hop trying to see what biotransformation does. I've read that brett has the distinct ability, moreso than sachh, to biotransform hop components. And yeah, I could try to just cold condition and bottle with 2nd dry hops still in.

    It's strain dependent. Not all Brett strains do it, but it looks like you're using a blend, so I'd imagine at least one strain would do that.

    Just curious, what are the usual end results noticed from Brett biotransformation of certain hops (i.e. what changes would a home-brewer expect in aroma or flavor).

    Any reason you chose WLP 550? Not that it's a bad choice, but I think that Galaxy would benefit from being paired with some fruitier brett strains, i.e. a blend such as The Yeast Bay's Amalgamation.

    +1 on that one. The Galaxy/Amalgamation combo will give you lots of the juicy, rustic pineapple/sweet tart flavors, given enough time. The hard part is waiting the 6+ months of bottle conditioning for it to evolve to that :wink:

    Why do you use brett for a bitter beer like this?. I personally am not a very friend of using brett in a hoppy beer, it is a matter of personal choices I guess.

    To each their own, but I have a feeling you're in the minority with this one... Brett + hops = a taste explosion that blows the mind! Hops with lacto is pretty kick ass too. Cheers!

    Totally depends on the type of brett. Fruitier brett strains work really well with hops, IMO. I don't care for hopped up brett beers that use the more musty strains though.
