    Raspberry From the Vine

    Wild Ale with Raspberry

    OG 1.056
    FG ???
    ABV ~6%

    37.91% Pilsner Malt
    37.91% White Wheat Malt
    15.17% Vienna Malt
    7.58% Flaked Wheat
    1.42% Acidulated Malt

    0.5 oz Magnum FWH for 26 IBU

    Water is 150 ppm Cl, 50 ppm SO4, 106 ppm Ca

    Primary with Sacch Trois WLP 644 @ 70F
    1 lb/gal fresh raspberry + 1lb/gal frozen raspberry x1 month conditioning

    Cold crash and transfer to cornelius keg
    Once room temp, add Yeast Bay Amalgamation Brett Blend
    Condition horizontally for 3 months

    I dont think you can go wrong with that recipe/process. I've used amalgamation twice (once for a 100% brett fermentation, and the other for a 2 month secondary) - both great beers in their own way. My only suggestion would be to add the raspberry to the secondary/corny keg for some more food for the amalgamation, given that the gravity is already low (sub 1.010) from the 644. I'd save the fresh raspberry for secondary and the frozen for primary. Either way it'll be a good wild!
