Recipe Feedback: Citra Saison

    Looking for any and all comments on the recipe for my next homebrew a Citra hopped saison. I've been meaning to give 3711 a try, I've heard it's great with Citra, and I happen to have a couple ounces of Citra left over, so this is my first draft.

    9lbs Pilsner Malt
    2lbs White Wheat Malt

    .25oz Citra (13.9% AA) FWH (90 minute boil)
    .75oz Citra @ 10 minutes
    1oz Citra @flamout

    Mash: Single Infusion at 149

    OG: 1.057 (70% efficiency)
    IBU: 28.8
    ABV: 6.3%

    That looks like a great recipe. The simple malt bill will really let the 3711 and Citra shine.

    Look out for the OG with 3711. My most recent batch was 1.052 and after 20 days in primary is down to 1.002.

    Maybe up the mash temp? Otherwise you're probably looking at 7%+ abv.

    One of my favorite homebrews is something quite similar. As mentioned above, I'd knock the OG down to 1.050 or so, as 3711 is like a honeybadger, it don't no shits, it's going to sub 1.005.

    Alright, thanks for the feedback. Knocked the pils malt down to 8lbs and the white wheat malt down to 1.5lbs. New projected OG is 1.049

    Looks good. I like to dry hop my saisons and bitter to ~40 ibu, but neither is necessary. I like the simplicity of the recipe.

    I agree with the comment about upping the mash temp. I brew all my saisons with 3711 and I mash 153-154F to get a finish around 1.006-1.007 which is where I prefer my saisons. I don't use any sugar in my saisons with 3711 either.

    I brewed a citra saison last year. If you really want citra to shine, you should consider using closer to 3 oz total from 10 minutes to flameout and then dry hop with 1 oz. Your recipe as is will produce a fine beer but from my experience the citra flavor/aroma will be present but subtle.

    almost exactly my saison recipe, except i add strawberries because i live in florida and...fuck it? do it. it's delicious and the beer my friends request i brew most often.

    I was playing around with the hop schedule (I am limited to 2oz) and came up with this alternative

    .5oz FWH
    .5oz Flameout
    1oz dry hop

    Any thoughts on this vs my original plan?

    Why not use another hop for your FWH/boiling addition? Use all of your citra for your late additions. Add 0.5 oz at 5 minutes and 0.5oz at flameout. Dry hop with 1oz. That's what I would do if you're only able to use 2 oz.

    Agreed. I use Magnum for bittering in my saisons.

    1oz Styrian Goldings FWH (3.9%AA)
    .5oz Citra @ 10 minutes
    .5oz Citra @ Flameout
    1oz Citra dry hop

    IBU: 27.4

    My personal experience with Citra (pellet) hops is very, very different from Cracker’s. I brewed an all Citra hopped IPA last year and that hop is not subtle. My experience is that Citra is the most potent hop from a flavor/aroma perspective that I have ever used.

    My late hop schedule for my IPA was:

    · 1 oz. for 15 minutes of boil

    · 1 oz. at flame out

    · 1.5 oz. dry hop

    After 2 weeks in the bottle for carbonation, I tried my first homebrewed Citra hopped IPA. That beer was INTENSE. I had a hard time finishing it. I let the beers condition for a few more weeks to let the aroma ‘mellow’. With additional age this beer was very tasty but the Citra hop flavor/aroma was still prominent.

    Based upon my personal experience I would recommend that you do not use 3 ounces for your late hop additions. In fact, when I read your original recipe my original thought was: man, with .75oz Citra @ 10 minutes and 1oz Citra @flameout he will not even be able to taste the flavors provided by 3711 (spicy flavors).

    So, to the OP you have to very different opinions on Citra hop potency.

    Thanks for the feedback everyone, I think I'm going to stick with the original hop schedule, I'd rather err on the side of still letting the yeast shine through.
