Personal preference for me, but.. I've used both D90 and D180 in quads and I prefer the flavor of the D90. Both are good, just personal preference. I suggest tasting both first to see which you like.

Your recipe looks like it will result in a tasty beer. Did you run this through brewing software to calculate the original gravity? Your gran bill appears too low to me (I would have expected to see something like 18 lbs. of base malt). There is no absolute need to up your grain amounts but if you want to brew to style you should consider doing so.

    Cheers!

Assuming a 5 gallon batch (into fermenter), 75% mash efficiency, and reasonable losses, this works out to almost 1.107 OG. With 70% efficiency, it would be about 1.101 OG. I'd say that's very firmly into BDSA range.

I typically assume a batch size of 5.5 gallons. I calculate an OG of 1.096. I brew my Quads with an OG > 1.1.

The recipe is consistent with a BSDA.

    Cheers

If the beer is done, How did the beer turn out? I am thinking about brewing up my first quad. Any additional information about fermentation temps and lengths would be appreciated.
