Recipe Help Redux: Perkuno's Hammer

    Sorry to start another recipe thread, but I've decided to hold off on attempting to brew Tsunami Stout and instead take a stab at a clone of Perkuno's Hammer Baltic Porter (unlikely that newer members outside of the east coast will know this beer). Supposedly Tom Baker, formerly of Heavyweight Brewing, gave these specs for hopeful brewers:


    Perkuno's Hammer Baltic Porter
    88% Munich
    7% Chocolate
    2.5% Caramel (Light)
    2.5% Roman Beans {a.k.a Borlotti or cranberry beans}
    [Soaked overnight to soften, boiled, and added directly to the mash]

    Hops:
    Northern Brewer (Bittering?)
    Hallertau (Finishing?)

    Yeast = Andechs Lager

    O.G. = 20.5°P
    ABV = 8.0%
    BT = 3 Hrs.

    Based on that I came up with:

    12 LBS Munich
    14 OZ Chocolate Malt
    6 OZ Caramel 10L
    6 OZ Roman beans

    Mash at 154?

    1.25 Northern Brewer at 60
    1 OZ hallertau at 15


    I'm not sure which yeast to use. Though it does call for lager yeast, I can only get down to the low 60's. Is there an ale yeast I can use in lieu of lager yeast that will get me where I need to be?
    Thoughts or suggestions? I'm very new to all grain so all help is welcome.

    Kolsch yeast is arguably the closest ale yeast to a lager yeast, but you'd probably want to ferment it between 59-62F anyway and it doesn't sound like you have that capability. I believe some kolsch yeasts are good up to 65F, but I'm not sure how "lager like" the final product comes out.

    P.S. Your timing on this is funny. My buddy beerloco and I are about to do a Heavy Weight tasting next weekend. Perkuno's Hammer, Old Salty 2000 - 2005, BA Old Salty 2005, and maybe a couple other ones. Not expecting much deliciousness, but it should be fun none the less!

    Good idea on the Kolsh yeast. But you're right, I don't know if I can get that low. I may end up doing the recipe with Nottingham yeast and ferment it as low as I possibly can.


    Have fun with the tasting, sounds like a blast to me. What an awesome vertical you've got going with the Old Saltys, I bet some are still drinking nicely. I only got to try a couple Heavyweight beers but they definitely left a huge impression. Sadly, Baltic Thunder doesn't come close to Perkuno's IMHO.
