    Hi everyone-

I'm planning on making this Warrior Pale Ale from Austin Homebrew: http://www.austinhomebrew.com/product_info.php?products_id=285

I'd like to dry hop it and was thinking Simcoe. Can anyone confirm that it would be a good choice to pair up with Warrior and Tettnang hops?

And would 1 or 2 ounces be good for a pale ale (OG 1.052)?

    Thanks!

hmm. Well Simcoe is the bees knees, and will add a wonderful nose to your brew. Warrior is a clean bittering, so you dont need to worry about that. Not sure hop much aroma youre giving the beer without knowing the schedule. Simcoe will have a big citrusy, grassy/pine -- its unreal how bright these aromas and flavors come out too dude. I think you will be OK, but keep in mind im biased in my love of simcoe. Youre in a good range at 1-2 oz, 1 will certainly be noticeable so it just depends on if you want a lot or a noticeable amount

My guess at the hopping schedule of that Pale Ale is Warrior is used for bittering while the Tettnang is used for late hop additions (flavor and aroma).

Tettnang is a noble hop which will provide subtle spicy flavors/aromas. A description of Tettnang: “Mild and Pleasant, Slightly Spicy.”

I personally am a big fan of Simcoe. The dominant flavor/aroma that I get from Simcoe is piney. I made an all Simcoe hopped IPA and I really loved that batch.

So, back to the OP’s question: “I'd like to dry hop it and was thinking Simcoe. Can anyone confirm that it would be a good choice to pair up with Warrior and Tettnang hops?”

The answer to the above question is highly dependent on what you are trying to achieve with this beer. If my guess about the hopping schedule is correct then dry hopping with Simcoe (which is a pretty potent aroma hop) will totally overwhelm the Tettnang hop flavor/aroma. Even if some Warrior is used for late hopping this hop is described as having a “mild citrus-spice aroma” so that will likely be overwhelmed by the Simcoe.

My guess is that either the Pale Ale as is or the Pale Ale augmented with Simcoe will both make tasty beers but will be different.

If you would like a Pale Ale with a noticeable piney aroma (which may overwhelm the other hop flavors/aromas) then you should dry hop with an ounce of Simcoe.

    Cheers!

Lots of good points to consider! Makes me want to split my batch and do half with dry-hopped Simcoe and the other without. I originally thought Simcoe would be good based on the description of Warrior being a pretty spicy hop and that it would complement it well. But the fact that it could overwhelm the other hops makes me a little hesitant. Hmmm.... I'll think on it. Thanks for the input!
