Never made a Pumpkin Ale so this is just off the top of my head. Thought it would be nice for fall gatherings and Thanksgiving. I want the beer to have a slightly thick body, but not too much sweetness, and am really looking for the pumpkin to play a balanced role with the spices not being too dominant. I prefer this to have a lot of balance...hence the adding the tincture at kegging and only adding a small amount of spice at flame out. What I really hate are the super spicy, sweet, alcohol bomb pumpkin beers.

    OG 1.060
    SRM 11
    IBU 23
    6.0 Gal
    Mash 155

    10.0 Rahr 2 Row
    2.0 Weyermann Munich I
    .5 Simpson's Crystal 55L
    .5 Dingelman's Biscuit Malt
    .25 Dingeman's Special B

Going to Mash with 3lbs of roasted flesh from pie pumpkins as well and lots of hulls.

    Willamette @ 60 Min
0-min 1/2 TSP Penzy's Pumpkin Pie Spice Blend

    Repitched BRY-97 yeast.

Tincture of Penzy's Pumpkin Pie Spice Blend added at kegging to taste.

    Anything glaringly out of whack?

i don't see anything glaring, i would probably up the 55L to a full# if you're using bry97...just be ready for a slow draining of the tun. Looks good!

I like my pumpkin a bit darker, but just preference.

Also, what is in "Tincture of Penzy's Pumpkin Pie Spice Blend?" It might influence my opinion.

Looks good either way. I like the low profile Willamette, and the bittering only addition.

I like the look of this recipe a lot. Add .5# rice hulls just before you take your first runnings

Penzey's Spice store- it is thier Pumpkin Pie Spice blend- has all the elements of spicing needed for pie. Tastes great. I basically will soak a tsp of it in some vodka (make a tincture) and add it to taste at kegging.

spices that make pumpkin pie taste like pumpkin pie, pumpkin by itself is kind of bland. clove, mace, cinnamon, ginger, nutmeg usually. some combo of that. of course pie is going to vary due to the types of sugars.

Ok- thanks for the feedback. I am going to up the 55L to 1 lb and take out the Special B, since I am out of that anyway. Going to up the Biscuit to 12 oz. Thought about subbing the Munich 7L for dark 20L Munich at a pound but that likely isn't going to make a whole lot of difference. Reason I am keeping it so light is I want the beer to be a hazy orange/copper color.

I thought about leaving the pumpkin out as well but what the hell, the in-laws gave me some so I will use them. I've got a ton of rice hulls on hand as well....should this thing go haywire.
