    Press Release:
(Chicago, IL) – Revolution Brewing, Illinois’ fastest growing craft brewer, is proud to announce the release of Dos Osos IPA, a collaboration brew from Revolution andFirestone Walker Brewing Company of Paso Robles, Calif.
“This IPA has a subtle malt base and is dry, crisp and clean, which is a trademark of the hoppy ales from both Revolution and Firestone,” said Revolution Brewing Brewmaster Jim Cibak.
Dos Osos IPA brings together two forces in American craft brewing, Cibak of Revolution Brewing and Dustin Kral, Firestone Walker’s Head Brewer. The two brewers, former colleagues at Firestone and longtime friends, have created what Cibak called a “Central Coast IPA,” named for the central California coast.
An array of hops including Warrior, Chinook, Centennial, Cascade and Citra infuse this ale with aromas and flavors of fresh flowers, citrus and passion fruit. The finished product is a clean, refreshing IPA with a crisp bitterness and complex hop bouquet.
The collaborative name Dos Osos, meaning “two bears,” represents both the bear on the California state flag and the Chicago Bears.
“Jim and I were once coworkers at Firestone Walker, but more importantly, we are extremely good friends with very similar brewing styles and a passion for sessionable beers,” Kral said. “Both of us decided to brew a beer that we could get together and drink.”
Dos Osos (was) released on draft on May 29 at the Revolution brewpub, 2323. N Milwaukee Ave., and at the Revolution Brewing tap room, 3340 N. Kedzie Ave. Dos Osos will also be available in 22-ounce bottles available for purchase at the Kedzie Avenue tap room and at various retailers where Revolution beer is sold. The collaborative beer (debuted) at the West Loop Craft Beer Fest in Chicago on May 25.

I am sad when there are collaborations between two breweries, and the one that gets distribution rights (or whatever that would be called) is the one that isn't distributed within my state.

Just to chime in, I was in Chicago earlier this week. Revolution was my first stop for beer and lunch--and Dos Osos was great! Worth seeking out...

sounds great, though the reviews are a little lukewarm.

so what's the deal with revolution? i know that chicago people have touted then for awhile now, but what are their specialties?

i mean, every brewery has a couple specialties, especially these local brewpub types. for example, cambridge brewing company is probably my favorite brewery, but they are pretty weak with IPAs, amazing with BA stouts/sours/barleywines, excellent with interesting but not overdone things like gruits or biere de garde, etc. they don't have a specialty per se, but they have their strengths and weaknesses.

what are revolution's strengths and weaknesses? what kind of drinker do you need to be for them to be your favorite spot?

Their mild was great, but I don't think they make it anymore.

Revolution does a variety of styles well. They have a pretty large barrel program for a 3 year old brewery, and are quite good at barrel-aging. They've made some great barrel-aged coffee stouts, barleywines, a rum-barrel wheatwine, etc.. They also make some very good IPAs, including a series of single hop IPAs that they are bottling. Eugene (canned porter) is definitely one of the best straight porters in the Great Lakes region.

As for weaknesses, I haven't had a saison from them that I like very much.

I think their wood series is great. Its not over the top like many other barrel programs now. The Bene Gene Porter is just so rich and sweet. Fantastic barrel aged beer, one of few i would actually call somewhat sessionable, along with 3bene by SixPoint.

I think Revolution does well with their IPAs. The anti hero varients have been a major success and I think Double fist is nearly as good as Double Jack. ( huge compliment if you could know how much I love DJ )

They can both a belgian and a habiscus beer that I have yet to try.

I made a trip with some friends to check out Revolution, and had several beers from them on tap. My brother in law has shared several of their beers with me, and I have not had a bad one yet. Not to say they do not have any mediocre beers, but I have not had one. Galaxy hero I thought was really good which I had recently, but Straight Jacket I thought was amazing.

I went to the brewpub last year and tried a few of their offerings. I found their list solid across the board, though nothing jumped out as outstanding. My favorite of the bunch was Coup D'tat which was a tasty saison to beat the summer heat. I'd be curious to try this collab mainly because I love FW.

DJ vs DF is a difficult choice I usually decide bas3d on the bottling date. 1st world problems and all that.

Lil crazy is the cann3d bpa. It's decent.

Rosa is the hibiscus. Haven't had this from the can but in Draft it's an interesting offering. It is pink

I think we can expect some big things ffrom revbrew in the future

You NEED to try this beer.... This is one of the "cleanest" tasting beers I've ever had...

Not exactly sure how to describe it, but it just tastes amazingly clean, crisp and SPOT ON!

I literally had not one complaint about this beer. Perfect.
