RO Water Treament for Saison w/Brett

    I was thinking of building up the RO water for a saison w/brett I am brewing tomorrow. I will be using East Coast ECY03. Wondering what other have done with success.

    For a Saison with brett id aim for super low calcuim (but not lower than 60) and anywhere from 100-300 SO4 from gypsum additions....

    IIRC Brett does good things in a lower PH beer, so start with your grain bill and see how much gupsum you can add to the mash to get to 5.3 PH, then add as much more (it will bring the PH down furthur) to the boil as you can without going too far over 300.

    IMO Saisons can carry a pretty firm bitterness, so dont worry about the high sulfates too much. Plus, I'd aim a spot lower than usual on the IBUs to make room for the extra dryness and "assertive" nature of the Brett.
