Robust Porter Recipe Critique

    Hey guys, looking for a little feedback on a robust porter recipe. Looking for something along the line of GLBC Edmund Fitzgerald

    10 lb - 2 row
    0.5 lb - Crystal 60
    0.5 lb - Chocolate Malt
    0.5 lb - Roasted Barley
    0.25 lb - Black Patent

    0.75 oz - Northern Brewer (8.5%) [60 min.]
    0.25 oz - Fuggles (4.8%) [15 min]
    0.25 oz - Cascade (5.5 %) [15 min]
    0.25 oz - Fuggles (4.8%) [5 min]
    0.25 oz - Cascade (5.5 %) [5 min]

    SafAle S-04

    Mash @ 154 for 60 min
    Ferment @ 64

    Edmund Fitzgerald Porter is one of my favorite Porters. I have never brewed a clone of this beer.

    From the Great Lakes website here are the stats:

    · OG = 1.061

    · IBUs = 37

    Great Lakes does not use Black Patent Malt in making Edmund Fitzgerald but I think that since you are only using 0.25 lbs. that is probably OK or you could nix the Black Patent if you intend to create a clone.

    I am not sure if you utilize a hop estimator as part of your brewing process but hopville.com (using the Tinseth estimator) indicates you will not achieve 37 IBUs with your hopping schedule. You will likely want to ‘bump up’ the amount of hops you add for the 60 minutes boil.

    The OP used Wyeast 1968 for his yeast. I would think that your choice of S-04 will be a good choice as well.

    thanks, I had not seen that thread. I have seen alot of different recipes for Ed Fitz but none that looked close enough to me. I have it plugged into Beersmith (Rager Scale) and I come out with 35.8 IBU's, which I figured was close enough. I may make some adjustments

    If you prefer the Rager estimator (and have had consistent experience with it) then keep your hoping schedule as is.

    The Tinseth estimator yields about 26 IBUs.

    Just a quick update on this recipe. I tapped this beer last night, and it is quite good. I tried it side by side with an Ed Fitz and the two beers are very similar, the only difference is the hop profile; there seems to be a little more hop presence in the Ed Fitz than in my homebrew. When I rebrew this I will take JackHorzempas advice and up the hops a little bit, maybe I will revisit this one using the Tinseth scale.

    I think your recipe has too much dark malt for Edmund Fitzgerald. As far as Porters go, it's far more smooth than the average Robust Porter and doesn't have that coffee-esque astringency. Based on the Great Lakes website and some modifications for homebrewing ease, I think this would get you in the right ballpark.

    Mash: 60 minutes @ 158-159 degrees, Edmund is very underattentuated (about 70%)
    10 lbs. of Pale Malt
    1 lbs. of Crystal Malt 80L
    1/2 lb. of Chocolate Malt
    1/4 lb. of Roasted Barley

    Boil: 60 minutes
    1 oz. of Northern Brewer Hops @ 8.5% AA (60 Minutes)
    1 oz. of Fuggle Hops @ 4.5% AA (10 Minutes)

    Wyeast 1056 American Ale Yeast

    O.G.: 1.061
    F.G.: 1.017
    ABV: 5.78%
    IBU: 37.2
    SRM: 32 (Black)

    Done and done.

    It came out nice, the base beer is very similar to Ed Fitz with the hop profile being the only noticeable difference.

    I am very glad to hear that your beer turned out well!

    It sounds like you have ‘tweaks’ in mind for your next batch. If you can ‘nail’ a clone in two batches you are an accomplished homebrewer.
