I have a Rochefort 10 & 8 that I purchased in the summer of 2011. How long should/chould they sit? I've heard many different ideas about aging this particular beer..

Just curious if anyone has any experience with Rochefort.

From my experience, as well as the numerous reviews on this site, 10 is easily still delicious at five years. 8 shouldn't be much different.

Vintage Beer includes a 10 year tasting of Rochefort 10, unfortunately it isnt in the Amazon preview, and I dont have my copy handy, but after 5 years you are definitely good on both assuming they were handled properly (not just by you but by the importer and distributor as well. I only say this because there are a lot of variables involved with imported beer).
