Room temp or cold storage?

    Ok all you beerkeepers out there..what's the standard for storage? Should IPAs' be kept cold? Do I leave stouts at room temp? What do you do and can you tell a difference?

    I think most people will say keep IPAs cold. Stouts can handle room temperature much better but will age faster. They are better below 60 degrees. Stone recommends 55 on most of their aging styles.

    If I recall correctly from the Vintage Beer book, there is an increased rate of aging over 50-55F. I think it was like once you get up to 60F it's equivalent to 1.25 aged years/calendar year, and 65F is like 1.5 aged years/calendar year. Long story short - the colder, the better for reducing the effects of aging. Hence, IPAs, which are more focused on hop flavors than malt, should be kept cold.

    yes yes yes IPA's cold. Also I know 55 seems to be the recommended cellaring temp for barrel aged/stouts, but I just bought a Parabola and it says cellar at 45.
