room temp vs cold

    I've read countless times that beer will save longer if it is stored cooler. This question is pointed towards the maturation rate of beer.

    Has anyone done a side by side of a room temp beer stored for several years and a beer that's been stored cooler for several years? I'm wondering if the flavor is noticeably different after a few years or if the longevity is just increased. I don't have anything in my cellar that I think will last more than three years around me. I haven't bought any lambics or Thomas Hardy yet. :slight_smile:

    By "cooler," do you mean cold like you'd drink bottled water or cellar temp? Whether it's in a fridge or a basement, cellar temp is the best option because for one that's how you should be storing them, and that's the temperature you should be drinking them. If you meant storing them cold, I don't think the beer would be able to improve/change at all. Just speaking from experience, but I haven't done a side by side. I age all of my beer and wine in my basement.

    Really depends on what the beer is. Supposedly beerandraiderfan is doing exactly this with Bigfoot and no one can tell. But then again Sierra Nevada has crazy quality control, and oxygen content is pretty key.

    Also depends on the temperatures you're talking. I doubt you'll notice much difference in the short term between 40, 55, and 65. But you'll probably notice the difference between 55 and 85.
