Room Temperature Cellaring Options

    I apologize if this question has been brought up before....

    I have a converted wine fridge that is currently maxed out with beer. I have not bought another beer fridge yet and have some bottles literally just hanging out in my kitchen cabinet's. They are mostly stouts (some BCBS and some Brooklyn Black Choc.) and one bottle of Bitches Brew. All my research tells me the ideal temp for storing beers is 50-55 degrees with a nice amount of humidity, but not too much. My beer fridge is right at 55 degree's so I'm not worried, but will keeping the bottles (standing upright) at room temp (currently 68 degree's) in a high cabinet that rarely gets opened damage them at all? I don't have a basement option and all the rooms in my apt. are right around 68 degree's so there isn't a "cold" room to use.

    They'll be fine. Take that ideal temp/humidity stuff with a grain of salt. The window that most people are talking about when 'cellaring' isn't near long enough where either of those items will come into play.

    Awesome. Glad I can keep cellaring beers and not worry about it. Just rotate them into the beer fridge as I drink!
