    This is the kind of stuff I am talking about with Urban Roots. Oak Foeder aged Siasons...

    That’s our Oak Foeder (pronounced FOOD-er) and it’s the star of our mixed fermentation program. It can hold 30 barrels of beer at a time and allows us to have more control throughout the aging process vs. aging it in individual barrels.
    We still remember the excitement we felt on delivery day 3+ years ago.
    Believe or not we’ve only released ONE beer from our Foeder so far and that beer is called In & Out Of Focus.
    In & Out of Focus is a beer that was nearly three years in the making and one of the first batches of beer ever brewed here. This Rye Saison was aged in our Oak Foeder for two years during which it was slowly fermented with brettanomyces and lactobacillus.
    It was then emptied, blended and cellared for an additional year. The result is a lightly tart Foeder Aged Rye Saison featuring soft notes of spice and fruit with an oaky finish.
    In & Out of Focus is a draft-exclusive beer that’s available now here at the pub and at select retailers.
