Saison Brett

    Anyone cellar a Boulevard Saison Brett?

    I have cellared a Seizon Bretta Logsdon Farms and I enjoyed it more than the fresh bottle.

    Lots of people cellar it. Depends on how dominant you want the brett to be. I've found that with that beer, anything over 1 year and the brett overtakes many of the other aspects of the flavor that I like.

    I'm working on a three year vertical right now coinciding with a 2015 bottle next year. I'll be sure to post about it once it happens. I've had it once with a year on it and it's a lot stronger sour, but does lose a lot of the saison flavors (which isn't a major issue with me personally).

    The 2013 I opened a couple weeks ago was a beautiful brett bomb. if you like that sort of thing :wink: Logsdon Oak Aged after a few months turns into a volcano.

    This beer is best fresh with the substantial dry-hopping still intact.

    I just opened a 2011 last week and it had started to fall apart. Yeast was out of suspension and it had tons off floaties. Tasted fine still, but not as good as fresh.

    I really enjoyed saison brett with 6 months on it. It had just the right amount of brett flavor for my tastes without completely dominating the entire flavor profile of the saison.

    I've done multiple verticals and prefer 'em right at about a year. In matter of fact, every year I buy some and put 'em away for the following year. So this year I was drinking '13's, next year 14's etc. As already mentioned, it all has to do with personal tastes. Buy a few, start a vertical and decide for yourself. Brett does some amazing things, good or bad.

    I had an '09 about a year and half ago and thought it was not good then I tried one about 3-4 months ago and thought it was pretty tasty.

    Just opened a 2013 Saison-Brett on Monday. Damn near perfect right now.

    I find the beer is excellent anywhere from a year to 18 months after release, in general I like it best in the first 6 months. It's still drinkable well beyond that, but starting at about 2 years (give or take a few months depending on storage conditions) I personally find that early oxidation steps in and I don't love what it contributes to the beer.

    I usually buy one in the late spring when it comes out and drink it on New Year's Eve, it seems to be about perfect at that point.

    I can only go off of last years at which I drank fresh. A superb beer! Can't see aging this one, but to each his own. Enjoy it how you like it!

    I have to disagree on aging saison brett. I liked the 08 and 09 best with 2 plus years on them. I think this one may be a matter of preference.

    I love it at eight months. Just my personal taste. Fresh it's a carb bomb.

    I just opened my 2011 because of this thread. I have to agree. Fair amount of yeast in the dregs. Nose when I opened it was great and had a lot of funk to it and I enjoyed the taste but not as much as I did fresh. Oxidation was starting to show and it was starting to get one dimensional with just some Brett flavors. I enjoyed it but I'll probably open my 2012 sooner rather than later.

    11 is decent
    12 is horrible
    13 is good

    So five years seem to be the sweet spot for you.
