Saison Recipe Critique

    Looking for some feedback for this Saison recipe.

    46.51% Bohemian Pilsner
    46.51% White Wheat
    6.98% Vienna Malt

    0.5 oz Amarillo @ FWH
    1.5 oz Amarillo @ Flameout

    The Yeast Bay Saison Blend

    Mash at 150F
    Water is 50 ppm SO4, 150 ppm Cl, 105 ppm Ca

    Ferment at 70F x3 days then free raise outside to 80F x4 days (I live in SoFL)
    Cold crash and transfer to cornelius keg with priming sugar and carbonate in keg x2 weeks horizontally.
    Then cold condition and serve.

    Two items of feedback. Anyone ever use The Yeast Bay Saison Blend? Anyone ever make a Belgian Saison lightly hopped with Amarillo? Thank you.

    I haven't used the saison blend from Yeast Bay but I do use Amarillo often with saisons. Even dry hopped with Amarillo is exceptional!

    I have no experience with the Yeast Bay yeast but I have used Amarillo hops (think Boulevard Tank 7). Amarillo hops 'work' well in Saisons.

    I just brewed a Saison last week that was fairly similar to your's – 12 lbs Pilsner, 2 lbs flaked rye. Amarillo and Centennial in the boil. I ordered the YB Saison Blend II in the mail, and they were kind enough to throw in a free vial of their original Saison Blend. Looks like I'll be brewing up another saison soon :grinning:

    I don't know how similar the Blend II is to the regular blend, but the Blend II took the beer down from 1.070 to 1.006 in just a week. Did well in the mid 70s during ferment. The amarillo/centennial went well with the earthy/grapefruit/orange zest that both blends apparently put out. I would think using just amarillo would be just as great. The sample tasted really good - earthy, peppery, lots of citrus. Hopefully kegging in another 2 weeks. I don't think you can go wrong with what you've got!
