    My next saison will get the dupont strain with forbidden fruit and bbt as supporting yeasts. Check out jason yester's article in this months zymurgy. Great info and inspiration for saiso. Brewing there.

    DuPont is fermenting in a much larger fermenter, where the depth subjects the yeast to pressure that acts to suppress expression of esters. It's a different environment from a homebrew bucket or carboy.

    +1 on the Belle Saison. I'm enjoying a 5%ish saison brewed with Belle Saison right now that turned out great. The flavor is a little bit delicate; not too peppery or spicy. It's very easy drinking for a summertime beer. In my two tap keezer, I find that I'm choosing the saison while guests are choosing the heavily hopped wit/pale ale.

    I see a lot of conversation regarding yeast, but don’t see anything of software (may have missed it, only took a quick skim).

    Warning, little bit of soap box:
    Record keeping is paramount to becoming a successful brewer. For me, I admire brewers with process control as much perhaps more than recipe formulation. You really need to identify where you’re having success and where there is opportunity for improvement. You achieve this goal with record keeping and luckily today with the use of great software, BeerSmith for example. I encourage you to make this small purchase if you haven’t already. Brad is not paying me for this hahaha
