Fresh it isn't particularly bretty although it is certainly there. I have finally decided I prefer it fresh with it's nice bright dry-hopping than after a year in the cellar.

I've got one more bottle sitting, I'm REALLY hoping to get some brett fruitiness, but somehow I doubt I will.
I've moved on to trinnity, those guys make some stellar brett beers. Right on par with HF with 99% less hype.

I haven't had the pleasure of having an of Saison Man's beers (well actually I did have slap yo mama) but definitely plan on grabbing some next time I am in CO now that Trinity is doing some distributing.

I am not sure what the word “focused” means in the sentence: “Pretty sure Victory Helios isn't really Brett focused, though it is pretty good.”

Victory Helios is fermented with Brett. Victory Helios has a funky taste (from the Brett).

    Cheers!

Can't believe nobody's mentioned Jolly Pumpkin's "Baudelaire IO" saison; it's out of this world good; I like Boulevard's Saison-Brett and a couple of the others mentioned above, but for me, IO is in another league entirely.

Super high carbonation like a saison should be. No issues.

Yeah, I've had my eye on that for a couple of years . . . would love to try it someday, but I don't think it's ever made its way to upstate NY!

Lente with a few months on it is amazing! I cracked a four year old Saison Rue last weekend and the brett had transformed the beer into a tropical fruit bomb!
