Scotch Ale/Wee Heavy recipe help.

    I am not too familiar with this style but figured I would brew something different. Does anyone have or know of a recipe (all -grain or extract) that is a good representation of the style.

    Also, I want to go out today and get a few to try. I was thinking SkullSplitter.Old Chub. any other must tries?

    One could probably argue how good a representation of the style Old Chub is (I don't particularly care; it's tasty), but here's a recipe for 5 gallons of it:

    11.7 lbs 2-row
    1.4 lbs English dark crystal
    15 oz Munich 10L
    7 oz Special B
    6 oz Weyermann Smoked Malt
    4 oz Chocolate malt

    35 IBUs worth of Nugget (~0.9 oz) @ 60 min

    Ferment at 69F with American ale yeast

    Target OG 1.078, FG 1.025

    Try this for 5 gallons.

    8 lbs Maris Otter
    4 oz crystal 60
    4 oz crystal 80
    4 oz special B
    2 oz chocolate
    .5 oz black patent
    30 grams East Kent Goldings (60)
    Wyeast 1728

    Take 1.5 gallons of first runnings and boil in seperate pot until it is syrup. Add this to the full boil.

    I like a good, strong Wee Heavy. My standard (~5 gallon) recipe is:

    18 lb base malt (both MO and 2-row yielded good results)
    4 oz chocolate malt (optional, if you like it a tiny bit darker)

    10 AAU bittering hops; variety is not hugely important (to about 25-30 IBU)

    Wyeast 1728

    I take the first 3 gallons of runnings and boil down to about a gallon of syrup (this takes a few hours), then drain and sparge the rest of the mash to get my standard 6.5 gallons for the boil. This means that the grain gets a couple extra hours of mashing, but I haven't found this to be a big problem. OG should be in the 1.100 range.

    One other thing ... time improves this guy a lot. I keg, but I bet bottle conditioning would be even better for it.
