Serving bottles cellared on their side

    I started aging my Cantillons on their side about a year or so ago...so hard with differing opinions but decided because I'd like to cellar most for an extended amount of time (5-?? years). I took one out to chill last night and saw the sediment on the side of the bottle, no surprise. What do most people do to serve it? Let it chill upright and the sediment settle? Or do people chill the bottle on its side and use one of those lambic baskets to serve (assuming that's the point of those).

    I cellar and chill on the side and use a lambic basket to serve. Yes, serving bottles without disturbing the sediment is the point of using a lambic basket.

    With all the talk of leaking Cantillons lately, I think a lot of people have decided to store them upright. There's no real reason to store them on their sides anyway.

    I honestly hadn't heard of the Cantillon leaking stories/issues...guess I'll have to do a search and read about that. My main reason for storing on their side was based on the fact that's how the Belgian breweries recommend and how they store for aging. Yes I understand it saves space for them but that's how they've always stored them and have a lot of experience with long term aging, more so than anyone else I'd think so I felt comfortable.

    Chanokokoro-where did you get your basket from?

    Look for wine serving baskets.
