Keep them in the holder and wrap as a block, or seperate and wrap each can? I'm a little concerned with the block method having the cans rub metal to metal during the trip. Advice?

Boy, it reminds of that one time when there was a crossbow in the box you sent.

I sent out a case of pounders one time. Easiest shipment I ever did. Make sure everything's snug, one layer of bubble wrap, donezo.

I sent out a 12 pack of Olympia once as a trade and I just left them in the box they came in. Obviously I put that inside a sturdy box with bubble wrap and whatnot but it made it just fine.

Like others have said, I brick, bubble wrap, box in box. The box in box is probably overkill, but its like 50 cents worth of Walmart box so I don't really care.
