I'm so happy today because I just received my first shipment of Belguim beers from Belguim in a Box. I notice that on a few of the Cantillon bottles I received you can see the sediment build up on the side of the bottle from being stored laying down.

Now here is my problem. I only have room to store the bottles upright in my converted chest freezer that I use as a cellar. Is this going to be any kind of problem? Honestly the beer are for a bachelor party. So I'm only really storing them till the event in July. I don't know if changing how they were stored creates any unforeseen problems even in the short term.

nah, you should be fine. The upright vs. on its side debate for cantillon bottles is completely inconclusive at this point from what I can tell anyway. I spent like a day reading a thread on it and the final result: none. especially if it's just until july, your bottles will be totally fine.

Agree. I store most of mine on their side for space reasons; just make sure you move & open it carefully when you're ready to open it to avoid the sediment -- or don't. Some folks (Sante Adarius) swear by the sediment and roll their bottles before opening.

I love drinking the sediment. I don't see why people don't do it, or think it's bad or going to hurt them. It was originally part of the beer anyway.

Drink a glass of gueuze with sediment side by side with a clean one and you will taste the difference.

Agreed I've done both and seen negligible difference.
