    I wonder if they will have any more releases at Perennial before the end of the year. Seems like the last 4-5 have been at the cellar.

    I talked with Cory a little bit and I remember him saying that he likes the Cellar releases as it allows more people to get the brews. I don't think that necessarily means that all releases are now going to be Cellar only though. Look at the tweet for Biere Blanche and look at all those barrels. I see something like that being an announced release. Cory also said that in the future once the brewery is complete(as in open to the public) he wanted to have beers like Grisette to be available at the new brewery all the time and then do "special" beers a few times a month. Possible that those beers might be unannounced releases.

    This is all speculation of course. One of the things I like about Side Project is that Cory peruses this thread from time to time. If there is something he wants to clarify/publicly let people know, he'll post.

    Agreed. Love that he is active here. I may have to send the GF back to Grad School so I have an excuse to go to St Louis more often. The way that last couple have been is defiantly awesome for local folks though. I always thought it was cool that SP mixed it up.

    I'm just curious as to how releases are going to work once the brewery is open. It's not that big and Maplewood won't tolerate huge lines like the PN4 release.

    I think the last Derivation was $50, double barrel may have been $60

    any guesses on how long Saison de blu will last to-go at the cellar? Do these disappear within days?

    Our last release ever at Perennial was PN4. We are a separate brewery, with a separate location, Perennial was an awesome stepping stone for us, but that time has passed. I stopped working there back in January and this year I have been completely focused on getting our brewery up and running in Maplewood.

    The production facility part of our new brewery in Maplewood is up and running, been brewing there for almost 3 months now. However, the tasting room, is waiting on a few things, a final inspection and our occupancy permit. In the meantime, we will be having these smaller releases at The Cellar, but know that I am bottling up a lot of batches in preparation for our brewery opening. This is why I have never given an opening date for the brewery, its opening is mostly in the hands of the powers that be at the county and city level. Once open though, we will once again have larger, announced, releases at the brewery.

    Also, people have commented on our location and parking. The parking lot next to The Cellar (less than a half of a block from our new brewery) offers a ton of spaces, the streets around the brewery have parking and we even have a small lot at the brewery. Maplewood knows what Side Project has become and we are going to do everything that we can to make our releases great for the city and for all of you wanting to come. We will continue to be over prepared and crazy organized, especially with a whole new place for our releases, new challenges and new processes.

    We could open tomorrow if we had all of the paperwork, but just know that we are close, very close, to opening and sharing our new space, some new beers and even a really big, new concept with everyone...

    So what will happen to the current tasting room? Closing that one down or will there be two tasting rooms now?

    As an aside...that 3 Candles...ooph. I'm not much into sours, so anytime SP dips into the stouts, I love it. But this one was just unreal and on another level. Best brew I've ever had anywhere. Wish it was bottled...would love to have some of that on-hand for a special occasion.

    Just curious Cory, have you ever thought about starting a beer society for your to-go bottles? I personally would love that, as it makes it possible for those of us that have day jobs to get our hands on some of your harder-to-get stuff.

    If not, at least it's relatively easy to try your whale offerings on-site at The Cellar.

    The SP Cellar will remain open once the new brewery is complete an open. There will be no changes other than (hopefully) more delicious SP beer. The current plan for the brewery tasting room is to be open only a couple of days a week.

    The Cellar isn't going anywhere! Actually, it will end up with more Side Project beer for onsite and to-go as we get the brewery fully operational.
