    Managed to pick up BBT. Now just seeing if a St Louis friend can proxy it for me, otherwise I may be on the look for one.

    Our house beer made for original location, The SP Cellar. Inspired by Brett Project #1, this blonde ale was fermented entirely in Missouri Oak & exclusively with our house Brettanomyces strain

    It's surprising to me that Continuance 4 is still sitting there. I've held off for a while but I'm thinking about getting a package. For people who had it how does it compare to other continuances. How prominent is the stout vs barleywine vs quad. Does the rum barrel come through much/at all?

    Soloed one Sunday night. It was very different from previous batches, which was very dark fruit forward like prune juice. Overall it’s more on the barleywine side than stout. I don’t drink rum BA stuff/quad quite often but I guess those threads are definitely playing a role in the flavor profile.

    BBT 23 definitely has a vanilla/coconut sweetness to it but it’s thin by SP standards IMO

    Just need to reduce it over low heat for a few hours to thicken it up. A nice BBT demi-glace.

    A roux might help. Just make sure you cook off the flour.

    Been using Abraxas in my chili base for years. I bet BBT has a place in a braising liquid....

    Next year's LC book should be recipes.
