I've heard a couple of people say they are aging this. I thought of holding a bottle back this winter, but it was so tasty I drank it all. Anyone aged this one? If so what were the results?

    it ages surprisingly well,
    the hop character
    remaining intact

The spices really shine about the 8 month mark.

Had a two year old bottle, it was good. Not worth the space in the cellar to me, but it held up.

Respectfully, it'll turn into a faded IPA. Will it hold up better than some others? Maybe. Is it still a faded IPA? Yup.

Thanks. I was curious, I will have to experiment next time.

It's worth it to hold on to a couple bottles for fun. I had a six year old bottle that was surprisingly good. Plus it's so chea that you won't feel bad if you don't like it.

I have a friend who's dad bought a bunch of beer years ago and its been sitting in the fridge since then. He's got 05-09 celebration, guess I need to get him to open those up with me. He didn't plan to cellar them, just barely drinks craft beer. I also found a 'best before 08' racer 5, and an 8 year old Malheur 12. Much more excited for the quad, lol.

You know, I bought a bunch to cellar and I've decided I like it way better fresh...

That is the problem, it is so good fresh. I may experience with a couple bottles, but not more than that.

Its not too expensive and mighty tasty, If possible I'd say buy two cases and save a six pack or so to age. As has been mentioned the 6 - 8month range seems to be pretty optimal in my opinion. I've had a few that made it a year or so and were still good, but not worth the wait. I think the Law of Diminishing Returns comes up sometime soon afterwards...

I'm drinking a 2011 right now! I'm not a fan of aged IPA's but I'm surprised at how it well it holds itself, definitely more spice than hops with this bottle but still drinks well

Remind me why you would age this again?

    Is that a beer haiku?

2011 had too much nutmeg

I had an '06 Celebration pretty recently, and while it held up very nicely and was enjoyable it was not better than fresh. I don't think it improves with age

I like to age a couple bottles every year. When fresh Celebration comes out, I share an aged bottle with friends to let them realize why you want to drink hoppy beers as soon as you can.

Theres a bottle shop that has 6 packs going back to 1999. I finally got curious and did a vert of 1999 08 09 11. We (6 ppl) all thought the fresher tasted better. Not worth the time, or money unfortunately. Still was fun to test it. Bigfoot is a whole different story.
