    SN is absolutely obsessive with bottling/canning with about the lowest dissolved oxygen in the industry. Higher DO is a big reason why some beers drop off, and it's why many of these very small local producers drop off so fast. And it's why SN's hoppy styles surprise people how long they stay fresh.
