Brewing a rye ipa tonight with Nugget, Amarillo, and Galaxy(dryhop only). Other than SN Ruthless, I don't have much experience with the style. Looking for thoughts on whether to add Simcoe or Columbus at flameout. I don't often use either of these hops. Any other comments are welcome as well (moar hops, less crystal!). Recipe below. og 1.073 fg 1.014 bu:gu 0.79 12lb 2-row 2lb rye malt 0.5 crystal 20 1lb table sugar .5 Nugget 60 1 Nugget 10 .5 Amarillo 10 1 Nugget 5 1 Amarillo 5 1 Amarillo 0 1 Columbus/Simcoe 0 (only have 1oz of each) .5 Nugget 0 2 Amarillo DH (7 days) 1 Nugget DH (7 days) 1 Galaxy DH (7 days)
Personally, I'm not a fan of nugget anywhere but at 60 min. I brewed an all nugget & Briess pale malt SMaSH beer a few months back and found Nugget to be strange tasting in a way that I find hard to describe. As far as your original question, I love both Simcoe and CTZ as late hop additions but my vote goes to CTZ because I have had good results pairing them with amarillo in APA's in the past.
just made one with simcoe and chinook, I was going for the piny flavor though. I do love the pungentness (if thats a word) of columbus.
i'd say 50/50...but if i had to choose one, I guess my vote would be simcoe by a slim margin. Also you need to at least quadruple the crystal Also be prepared for a slow sparge. You have rice hulls on hand? I always condition my malt prior which helps alleviate slow sparges, but doesn't eliminate them.
Might be the first time anyone has sugested the increase of crystal in a recipe here. "I always condition my malt prior" You what?
was said in jest...but i'm not scared of no crystal malt. I've gone up to nearly 20% cara malt in big ipas with good results. Malt conditioning, spray bottle is all you need.
I browsed some recipes on HBT and hopville and there was very few with simcoe additions. I ended up using the CTZ. I pulled an all-nighter brewed 3 batches on Sunday to ensure they have enough time to condition. The wedding is coming up quick!
