Siphon or Splash

    Got everything I needed for Christmas to brew my first beer and I'm reading through How To Brew now. I noticed one of the first differences in what the book says and what the ingredient kit instructions say and I was wondering what others actually do. When going from the boiling pot to the ferment bucket should I siphon over to eliminate the trub or don't worry about that and splash back and forth between the two to get more oxygen into the wort?

    IMO you don't want all of the trub in your wort. You need a little though. I get this by pouring the wort through a sanitized stainless steel strainer. This does oxygenate the wort somewhat, but I don't rely on that. I also use pure O2 through a sintered SS stone.

    If you don't have a strainer and don't have an O2 setup, then for your first batch I'd recommend whirlpooling your wort to get most of the trub in the center, then racking (siphoning) from the edge (away from the trub). Then shake the bejeezus out of the sealed fermenter to get O2 into solution.

    ETA: It's good to question kit instructions. They often suck, or are at least not up to date with best practices. So keep asking questions, and good on you for reading How To Brew first.
