Sisyphus thoughts?

    I think it's great that brewers tune into these forums. Was i Dickish in my posts? I didn't mean to be and apologize if I was. I don't have as experienced a palate
    as a lot of people on here so maybe I should have just piped down.

    I was speaking generally, and not at all about your post. Re-reading it now, I think it's completely fair. We all have our opinions, and you stated yours. I'd say that's what this site is for, and I'd suspect your opinion is probably valued by the brewer.

    SirDidamus: I didn't think your post was dickish at all. Everyone's tastes are different, and that's the awesome thing about beer. All I can ask is that you give us another chance. After that, we might not still be for you, but I'll do my best to make sure that isn't the case.

    I'm a beer lover, just like you guys, and I really want this to be a place people like hanging out while drinking tasty beers. We plan to keep things always changing up, both on the tap list and just the space in general.

    Thanks everyone for voicing your opinions and I hope to see you, and chat with you, in the taproom sometime soon! My personal recommendations: Brett ipa, DIPA, or black ale w/ coffee.

    I think double kudos to @Oneeighthcuban for even looking for feedback - especially here! That tells me he wants to not only brew for the craft scene in MSP, but also make a high quality product that those with the beer palate will enjoy. From my point of view the craft scene is very trendy in the cities... The tap rooms fill up with people, not only b/c of the beer but b/c they are the place to be... but there is a small minority that go from place to place and look for damn good, fresh, high quality beer... and it looks like @Oneeighthcuban is appealing to both, which if the market has shown anything will equal success...

    I find strength in anyone that is willing to ask the question - "How can I do this better?" and actually take constructive criticism and put it to use...

    Keep on man - I am glad to give my business to a local guy putting out a good product - keep on adapting...

    plus - I love the comedy idea...

    I met @Oneeighthcuban while in line for the town hall barrel aged growler release, great guy...looking forward to making my way to Sisyphus in the very near future!!

    Big ups to you for coming into the forums with such a positive attitude, it's awesome to see that some local brewers really care about what the geekier side of the beer community thinks. I'll be stopping by tonight!

    I will definitely keep coming back as i really like the concept of rotating taps and different styles. I think as a drinker it behooves me to educate myself on different styles and I think we're really lucky to have brewers like Sisyphus so dedicated to the customer. I think some styles have been so distorted (dipa) that people expect hop bombs when the style Sisyphus puts out might be more accurate or at least different and well balanced. I agree that the black ale Brett and dipa have been my faves and I think it was just thrown by the oatmeal pale ale not tasting like my narrow mind expected ;-). I'll definitely keep coming and appreciate the fact that I can talk to the craftspeople directly!

    I haven't had Sisyphus's DIPA, so the following comment isn't referring to their beer. DIPA is all about hops, raw and wriggling. I find the concept of a balanced DIPA laughable. That's just me though.

    Great that you chimed in @Oneeighthcuban. As I noted, opening night I wasn't blown away just due to the sameness of the brews to me, but watching social media and all the other stuff you've had I'm itching to get back.

    See, for me it is the opposite and if anybody has seen me post about Pliny batch variations (which batches are "on"), this ties into it. I tend toward bigger IPAs and IIPAs, because I want more malt to balance out the hops. I rarely drink single IPAs, except for a few that I love, because when I am drinking a 4.5 - 6% IPA, the hops seem too biting these days because of hop bombs that most breweries are trying to make. But the malt needed for the higher ABV beers, usually balances usually balances the hops.

    As far as Sisyphus' IIPA, I thought that it was quite good and yes, pretty well balanced. But it still gave me a bit of a hop punch on my first sip, which made me think at first that I wasn't going to like it, but sip after sip I enjoyed it more and more. I enjoyed everything there, except the black ale on its own (no coffee). I was getting some crazy overtone to it that works well with the coffee, but not very pleasant on its own. I just hope that they start testing different ways of introducing the coffee during the brewing process (even as a late addition), rather than pouring coffee into a completed beer.

    Over all, for such a new brewery, I think that these guys are doing a great job and the tasting room was also simple, yet inviting. I loved all the available street parking!

    We all have our preference. But, for me IPA/DIPA are styles meant to showcase hops. Hop bitterness/flavour/aroma. Malt? There are plenty of styles that showcase malt and no one complains that they don't contain enough hop character. When has anyone said that their Wee Heavy or Doppelbock wasn't hoppy enough? More so than any DIPA is intended as a hop showcase. To be criticized as too hoppy, or not malty enough is fucking asinine.

    I would say its more asinine to present your opinion as objectivity (as you are doing by calling someone else's opinion asinine). Then again, that's just my opinion.

    Not to mention beers that are more balanced are well within the style of IPA/DIPA, but let's just stick to name-calling and subjectivity.

    I went on Thursday night with a friend of mine, not even knowing it was comedy night. It was a blast, the comedy was solid, the atmosphere was great, and the beer was tasty. The DIPA was tasty, not as hoppy as I could imagine, but also devoid of the cloying sweetness some of them can have, making it really drinkable and refreshing. The Brett IPA was way funky, tons of Brett character, especially young Brett. It will be cool to see what comes from the barrel aging program.

    I also got to talk briefly with @Oneeighthcuban, which was really cool. I really can't wait to see what they'll be doing in the future, any local brewery that is this adventurous right off the bat has a huge amount of respect from me.

    Went on Saturday in the early evening. It was packed! Nice crowd pickup from the festival going on in Loring Park. They're tucked away but clearly people aren't having trouble finding them. I enjoyed the black ale with coffee the best, though the DIPA and the oatmeal stout were solid as well. I love that they're starting off small with a lot of variety and frequent rotation. I will be back. (want to try the Bret IPA which was not on)

    @Laxadaisical Thanks for stopping in and thanks for chatting. I'm guessing you were the guy with the brother that worked at Town Hall? Really glad you said hi, and thanks for letting me share with you what I'm hoping and am trying to make happen in our space.

    @billhelm It was definitely packed Saturday! I was for sure a fan of that. We ran out of the Brett IPA much earlier than I even expected last week. I've got another batch ready to go for this weekend, and just brewed one today. That and the DIPA have been the definite favorites.

    @mkhartnett Glad you checked us out opening night! I'll gladly admit that we have gotten better since then in a lot of ways (in my opinion). And I like where we are headed. We are too new to have proven it yet, but things will truly be constantly changing and evolving to make our taproom a better place.

    Thanks to everyone who contributed here and I really appreciate the honest feedback from everyone! Hopefully see you in the taproom in the future.
