SMaSH IPA with Peaches??

    Thinking of doing a 5 gallon light LME extract with 7 oz of Simcoe. Has anyone ever added any fruit to a smash ale?? I was thinking of freezing about 10lbs of peaches and then throwing them in the secondary for a week. Should I freeze and then soak in rum or vodka or would they be ok just freezing?? Texas Peaches are ripe right now and cheap! Any suggestions would help!!

    I have 4# of peaches in the freezer right now awaiting a similar fate in a pale ale or IPA. I washed them, rinsed in star san, then halved them prior to freezing. The alcohol, pH, and IBUs should be an inhospitable environment for the baddies (at least that's what I'm banking on)

    You should SMaSH the peaches after thawing. <jk>
    I have never done anything with fruit other than freeze/thawing. A couple more random thoughts...

    - Adding fruit to a SMaSH beer kind of goes against the reason most people brew SMaSH beers, i.e. to isolate the contribution of a particular ingredient.

    - I've never used peaches, but wise men have said something like "If you want peach flavor in your beer, use apricots." I think this was in regard to it being hard to get strong peach flavor from a reasonable amount of peaches. Again, I haven't used peaches, and I'm sure someone else can jump in here who has.

    Yeah thats what I've heard that you can do. Wash, rinse and cut them up to make freezing much better in regards to sanitation.

    I agree with you in the sense that you are taking away from the isolation of the hops. I am not looking to get an overpowering or even a "stong" peach flavor. I was just looking for something sublte that could blend in well with the hops. Considering that SMaSH ales are already partially "tropical".

    ? Depends on the hops. You can SMaSH with any hop (and any base malt).

    I had Avery's peach Saison recently. It had pretty good peach flavor.

    My only suggestion is for you to let the peaches get extra ripe.

    Thanks! I've had 2 the past 2 days for desert and they are already ripe!! Which is why I wanna jump on them right now and get it brewed possibly this weekend!!

    I thought about adding some peaches to a Berliner Weiss I want to make.

    Ferment US-05 @ the top of the band...you'll get plenty of peach without compromising the cobbler : )
