    I am going to do a Maris Otter and Galaxy pale ale in the next 2 weeks.

    14lbs Maris Otter for 5.5 gallon batch
    90 min mash 154 degrees
    60 min boil

    .5 Galaxy 60
    1.0 Galaxy 15
    1.0 Galaxy 5
    DH 5 days 1.5 Galaxy

    US-05

    How does everything sound with the hop additions?

    What's your mash efficiency? 14 lbs of M.O. in a 5.5 gallon batch, @ 75% mash efficiency, would give you an OG of somewhere around 1.072. Pretty high for a simple pale ale. Are you looking for a 7.5%+ ABV? The IBUS from that hop schedule would be more in line with a smaller beer.

    Give me 1 full oz @ 60 or back down the MO to around 11-12#. I'll be over for the tapping. :slight_smile:

    What's the benefit of doing a 90 min mash vs a 60 min?

    Have you used this hop before?. IIRC it gives a pungent passionfruit flavor when adding at the last minutes of boiling

    More breakdown of dextrins into fermentable sugars, thus a higher alcohol and drier beer.

    Looks like 14lbs of Otter will give you O.G. 1.068 F.G 1.017 6.67% 7.01SRM.

    I have never made a SMaSH using Galaxy before so I can’t guess at the resulting flavors. But the grains are fine.
    I just made a SMaSH using Mosaic hops. My base malt is 2 Row American and or Pilsner for SMaSH tests at around 12lbs for 5 gal.

    I would suggest you split the beer into at least 2 batches and dry hop with diff amounts to test with. Instead of making 5 batches you just make 2 and spit them up. I use my boil pot and water pot to split the batch in half at around 45 min boil mark then add my flavoring hops in diff amounts. Then spit those 2 half’s again for dry hopping at diff amounts.

    Speeds up the hops tests in a major way. Instead of two 5 gal test batches I just got 8 test batches out of two 5 gal batches.

    What @utahbeerdude said plus more carmelization of the wort through maillard reactions and more hop utilization thus more perceived bitterness.

    FWIW I don't think you need to dry hop if your goal is a simple pale ale. Instead, I would do that addition at knockout. But that's me.
