Hello. I never knew this forum existed. Smoked Gouda is the cheese that is always on hand in my house, and I eat regularly with beer. Any dynamo pairing recommendations (style wise, not brand specific....unless is it avialable in NY) that you could recommend?
A good stout, but nothing too sweet or barrel aged. I like how the smokiness of a cheese goes well with the roasted coffee/chocolate flavors in a stout. Personally a dill havarti with a goose island sofie or another farmhouse ale/saison is quite enjoyable.

Yeah, a good roasty stout that isn't too dry or too sweet. Something a little chewy w/some great coffee notes would be perfect (region specific for me would be Modern Times: Blackhouse or Barrelhouse Brewing's Stout.)
As I'm not a very big fan of stouts with food (minus desserts or breakfast) I'm going to go against the others advice and suggest rauchbier, brown ale, IPA, or a Sour. Browns and rauchbiers as a compliment, sours as a contrast. IPAs and pales IMO are the best all around beer for cheese pairing but obviously adjust the style/ABV to the cheese in question. For your smoked gouda I feel like a DFH 90 Minute would do well. I feel a nice malty scotch ale may also work as a compliment. Overall, if you like smoked cheeses then get away from the gouda. So many other awesome options out there, though I know gouda is probably the easiest to to find
Haven't tried a cheese pairing for smoked gouda but I had some aged gouda a few weeks ago with Sierra Nevada Tumbler and it was excellent. I think any brown ale or porter will do you well here. Rauchbier would be great too.
I prefer Gouda with a German Rauchbier or maybe Doppelbock. Also enjoy it with a Scottish style ale like Founders Dirty Bastard or McEwan's.
For stronger cheese I like a sweeter to lighter beer, or something a bit more subtle. But bold beers can be enjoyable too with them if you like that as well.
I'm about to serve up myself a special cheese platter while I watch the Packers tonight. Rembrandt Extra Aged Gouda (get it at Costco) will be on it and it always goes well with a crisp Czech Pilsner.
Pretty much anything with plenty of malt character or some smoke; my vote is for a good wee heavy or dopplebock, unless you have some Alaskan Smoked Porter handy.
How about a smoked porter. Some of the smoked beers can be a little overpowering, but my local brewery (la cumbre) recently released "gracias pot fumar" a smoked porter aged in wine barrels. The smoke is nice and mellow. The wine and smoke would pair awesome with a strongly smoked Gouda!
You could go super crazy with it and try a Schlenkerla? But I'd want a nice butter cracker with that cheese too.
