S'more Beer

    I did a BIPA and cold steeped Blackprinz. Came out wonderful. No hint of dark grain flavor. Definitely going to integrate this practice more!

    So late to the game here. I'll talk about my attempt at one...

    Once upon a time there was an old forum system at BA and then there was [whispering] the great crash of 2012 [/whispering].     In that old system there was an extensive discussion about a S'More beer made with marshmallows and graham crackers in the boil / mash. I tried something similar to what was talked about, learning that the use of marshmallows was a disgusting mess that fermented dry anyways and came up with the following recipe:

    Mash:
    12# Maris Otter
    1# Brit. Choc Malt
    1# Special B (I think I used British Dark Crystal)
    0.9# Graham Crackers
    0.5# Roasted Barley

    0.75 oz Magnum @ 60

    OG: 1.080

    Added to Fermenter:
    1.1# Lactose
    9 oz Cocoa
    1 TBsp pure vanilla extract

    1 Pack Windsor & 3 oz 1272 slurry

    It was a great sweet stout. Won a club competition for chocolate beers and turned a beer nerd to loving home-brew (he had only had amateur efforts) but was not much of a S'more Stout. The Graham was barely (if at all noticeable) and the vanilla needed a bit of a kick for the marshmallow.
