So did I screw up?

    Just bottled my second ever batch today and my FG is not where I expected it.

    OG was 1.050 and the FG ended up at 1.017.....I'm thinking it should be closer to 1.012 or so. I'm still very new to this and it wasn't a kit so I'm not entirely sure where exactly the FG should be but the guy who put the ingredients together for me said it should be above 5%....with this FG it's looking at roughly 4.3% ABV.

    Here is the receipe I used

    8 oz Munich Malt
    1 lb Victory Malt
    12 oz Dark Crystal Malt 60L
    4 oz Chocolate Malt

    7 lb Light malt extract
    1 oz Northern Brewer Hops 8.6% (60 min boil)
    1/2 oz Willamette (30 mins)
    1/2 oz Willamette (5 mins)

    Safale S-04 Dry Ale Yeast


    My first batch which was a Kolsch hit the FG right on the nail....so I'm not sure what I did wrong this time around to screw up the FG so badly.

    Should I have not bottled? Did leaving it for 3 weeks in primary have any adverse effect?

    Leaving it for 3 weeks shouldn't have any adverse effects. If anything just plenty of time for the yeast to finish out. I personally wouldn't worry too much about the difference, just how it tastes. Us-04 usually attentuates a little higher for me compared to us-05, which I mainly use.
