I was enjoying a GI Sofie yesterday and I noticed that the label on the back says "Develops in the bottle for up to 5 years". I never would have thought to age a 6.5% Saison for that long. Has anyone done this?
I had some 2009 at the GI vintage sales kickoff tasting about a month ago. That tasted a lot like fresh Sofie, maybe a bit less carbonation. It was one of the least developed of all the things they cracked that night.
I just cracked a 2010 recently and thought it was great. Had a great tartness to it. Definitely worth aging a couple IMHO
