Something apricot, recipe help plz

    So my wife comes to me and says, how about something apricot? Think this all started with Samuel Smith's Apricot Ale, she loved it. So I don't want a clone or a fruit beer of any kind. I'm thinking of a Hef. Thoughts? Last time I did a fruit addition, yeast consumed a lot of the flavor (blueberry); shouldn't have been surprised thinking fructose being very if not all fermentable. I don't have a forced carbonation and therefore can't kill the yeast mid fermentation. Do I or are there artificial apricot options? Last, a recipe baseline would be helpful.

    ^blonde ale is a good idea, keep the hops almost non-existent

    a belgian enkel/table beer (use WY3522) with apricots would be great, or another option would be a apricot b-weiss

    i would personally would not like a apricot heffe. I dont think clove, banana, and apricot sound like a good mix

    I can see why she might like the Sam Smith Apricot - I thought it was a delicious fruit bomb.

    Does she like sour fruit beers? I've been thinking about working on these types for a while, but haven't gotten started on them yet.

    The last time I did a "real" Berliner Weisse (decocted, mash hopped, Lacto first), I split it onto dried apricots (~0.5 lbs per gallon). My wife really dug it.

    The first batch I made with Heady Topper yeast was a SMaSH with just 10 lbs of 2 row and 2 oz of cascade. Everyone thought I had added peaches or apricots to it. I would say make that beer and add actual apricots and your wife would probably be satisfied with the apricotiness.
