Sours... Leave the dregs behind?

    So, I'm VERY new to sours. I have a few lined up and I'm ready to dive in head first. I've seen some mixed feelings and I'm wondering the general consensus. Thanks in advance!

    Leave them behind, drink them separately if you want.

    They have a tendency to wreck havoc with your stomach for some people, myself included. I don't drink them anymore but I would start out with a 3-4 ounce sampler to see how well you tolerate it gastro intestinally before diving in head first.

    I don't think there is a general consensus. I try to get all of the sediment in the final pour.

    375 - first pour i leave behind 1/4 to 1/3 the bottle. then i finish the rest WITH the dregs
    750 - i just leave them in a final 3rd pour.

    regardless, i always drink them. it's good for the ole "system". keep it real.

    The only beer that I want the dregs in on my first pour would be with weizen beers (hefeweizen, dunkelweizen), not a fan of them in my weizenbock even.

    If you are willing to take the time I would try and pour the beer to a few glasses (hopefully you are sharing with some friends / family) and leave the last couple of ounces behind in the bottle. You can always try the sediment / dreg pour after finishing your clean pour, but to combine the two together right off the bat is a shame.

    I am more anal than most about keeping pours of my beers clear until the end.

    great thanks guys. now for the follow up. are you guys storing them on their sides? if so, how are you leaving them behind for the final swirl and pour?

    I normally leave it behind. Just a habit.

    I store upright, but even if you store them on their side, you should be setting them upright in the fridge a day before you drink them.

    anything i drink from the cellar, usually comes out of the cellar 55* and directly to my glass. but i guess if i know im going to drink it, i could give it the old swirl and stand a day prior
