    Hi

I recently came across some Southern Cross at a discount, and having had a look at the descriptions, I decided to pick some up. I did not however look at any recipes first. I am having trouble finding any recipes for Southern cross that look convincing (without nelson s.). Does anyone have any thought on this hop and how to use it fir flavour/aroma?
I was thinking to s,use it as a single hope pale ale/IPA, at least with SC being a major hop in late hop addition, and a simple grain bill with ~80% pale 2row, ~20%vienna + a little C10(ish).

I am very curious about this hop and how it would work best, since it often is suggested as a replacement for the strangest hop in the world (sorach ace) and vice versa.

As a bittering hop...much better Southern Hemisphere flavor/aroma hops available, imho
Galaxy and Pacifica come to mind if you don't like NS.

I was drawn to this hops and actually have some in my hop yard to test out. I was drawn to it's some what similar characteristics as Chinook. I have never used Southern Cross though so can not say. I have not had much luck finding the hops either. So when I get some this fall, I plan to make a SMaSH or IPA with them to test them out.

I’d do a single hop beer with it and see how it turns out, I bet it’ll be awesome. Sounds like it has a great mix of citrus/pine/spice which could add some decent complexity for just one hop and it’s a great bittering hop so you won’t get any harsh bitterness which can sometimes be the drawback when doing a single hop beer as some aroma hops can make for some harsh bitterness.

I personally don’t really like Vienna, do you make many hoppy beers with that high a percentage of Vienna? For Pales I’m a big fan of a decent amount of Golden Promise mixed with some 2 row and maybe a touch of C40 for color but that’s just me.

Let us know how it goes. Wouldn’t surprise me if it’s like the Bravo of the Southern Hemisphere
