How does this hold up cellaring? I found a bottle shop that has some still left, and I've been thinking strongly about stocking up.

For my tastes, this is not an optimal Imperial Stout for cellaring. It's quite sweet when fresh and tends to increase in sweetness over time. I've had it at about 3 years (cellared pretty cool) and it had lost some chocolate flavor, as well. I'd stay at a year, or less.

Alright looks like I'll pick up another bottle for drinking then.

I am currently cellaring two bottles, but cant share any actual experience since i havent had them yet. I think its more of a balanced beer than people give it credit for.....so while i dont have an intentional reason to age these....since they are only 6.99 its a cheap expirament for me.

I actually found one in my cellar while moving this past weekend. Date is 2012. I may open it soon just to see.

I opened a 2012 ChokLat with 2 years on it and liked if more than fresh. I found the fresh bottle to have a bit more heat on it. For me, the 2 years in the cellar mellowed it out. The chocolate was still present in the bottle I had.

I still have another bottle of from 2012 that i'll open up this winter to see what happens.

I wonder how it would go against Mokah or a Mokah with age on it? I found it to be waaayyyyy to sweet fresh while Mokah is one of my favorite chocolate beers.

Another vote for fresh. I love it fresh and buried a bottle in the back of the fridge (60 degrees) for a couple of years and was not a big fan. I did the same (accidentally) with a bottle of mokah and didn't even finish the bottle. I found both bottles lost a lot of the big adjunct flavors that make them so delicious fresh.

Store nearby has a few bottles of 2012 Choklat in the fridge, always debate picking one up whenever I go...
